Thai Noodle Curry

Recipe inspiration, whatever the occasion.

Ingredients

  • Coconut drink sachet
  • Shallots
  • Broccoli
  • Pepper
  • Courgetti
  • Lemon juice

Curry powder:

  • Turmeric
  • Dried coriander
  • Cayenne

Method

  1. Boil broccoli for 4-5 minutes
  2. Mix 230ml water to the Coconut drink sachet.
  3. Heat a wok with 1 tbs of oil add in chopped shallots, peppers, then add the broccoli and courgetti
  4. Add in the coconut drink mixture and squeeze ½ a lemon into the wok add 1-2 teaspoons of curry powder (make sure this has no added sugar)
  5. Bring to a simmer and stir frequently until sauce thickens.

Best thing since a slice of cake.! After seeing a picture of myself at Christmas 2015, l decided to do something so l took the plunge and phoned Alevere.  Hard bit done, the diet is simple, follow it as advised, and watch the pounds fall off, and they literally did.  The hardest thing is walking through the doors, but remember everyone there is in your shoes. I feel 21 again.
