- Boil broccoli for 4-5 minutes
- Mix 230ml water to the Coconut drink sachet.
- Heat a wok with 1 tbs of oil add in chopped shallots, peppers, then add the broccoli and courgetti
- Add in the coconut drink mixture and squeeze ½ a lemon into the wok add 1-2 teaspoons of curry powder (make sure this has no added sugar)
- Bring to a simmer and stir frequently until sauce thickens.
