Proper Vegetable Chilli



  • Vegetable chilli


  • 25g x aubergine
  • 25g x courgette
  • 25g x green pepper
  • ½ tsp x chipotle chilli powder
  • ½ tsp x smoked paprika
  • ½ tspxpaprika
  • ½ tsp x cumin
  • ½ tsp garlic salt
  • ½ tsp onion salt
  • ½ tsp cinnamon
  • Lemon Juice
  • Salt and pepper


  • 25g x red pepper
  • 25g x yellow pepper
  • 25g x onion/shallot


  • Dice the vegetables, season with salt pepper and spices.
  • Place in a tin foil pouch and bake for 10 minutes at 200 degrees Celsius.
  • Make up the vegetable chilli sachet by adding 150 ml of boiling water and microwaving for one minute.
  • Combine the vegetables with the chilli and check the seasoning adding a little lemon juice for that extra zing. I like to serve this chilli with cauliflower rice and some homemade pickled jalapenos. You may also like to add some freshly chopped coriander or even a tablespoon of yoghurt.

Best thing since a slice of cake.! After seeing a picture of myself at Christmas 2015, l decided to do something so l took the plunge and phoned Alevere.  Hard bit done, the diet is simple, follow it as advised, and watch the pounds fall off, and they literally did.  The hardest thing is walking through the doors, but remember everyone there is in your shoes. I feel 21 again.
