Mushroom & Cauliflower Curry With Garlic Naan

Ingredients

  • 1 packet Pizza sauce mix
  • 100g cauliflower (limited item)
  • 100g button mushrooms
  • Bunch of spring onions (green part only)
  • ½ tsp chilli powder
  • ½ tsp garlic salt
  • ½ tsp ground ginger
  • 2 tsp curry powder
  • 15mls olive oil (limited item)
  • 15mls fat free Greek yoghurt (limited item)
  • Hand full of fresh coriander


Garlic Naan

  • 1 packet pizza base
  • ½ tsp garlic salt
  • ½ tsp cumin powder

Method

  1. Pre heat the oven to 180°c
  2. Cook cauliflower in boiling, salted water until tender. Drain and set aside
  3. In a blender put spring onion greens, ginger, garlic and curry powder with 4-5tbsp of water and blend into a paste
  4. Chop any larger mushrooms and fry in oil. Once mushrooms have absorbed all the oil add 1-2 tbsp water and continue to cook until soft, then remove.
  5. Mix the pizza base with 40mls of cold water. Add the spices and cook for 10-12minutes.
  6. Add the spring onion and spice paste and cook until it begins to colour. Mix the pizza sauce with a little cold water to form a paste. Add the tomato paste to the pan along with the chilli powder and cook for a further few minutes. Then add the yoghurt. Bring to a simmer and top up with 100mls of water.
  7. Add the cauliflower and mushrooms and cook for a further 10mins. Stir in the chopped fresh coriander and serve immediately

Best thing since a slice of cake.! After seeing a picture of myself at Christmas 2015, l decided to do something so l took the plunge and phoned Alevere.  Hard bit done, the diet is simple, follow it as advised, and watch the pounds fall off, and they literally did.  The hardest thing is walking through the doors, but remember everyone there is in your shoes. I feel 21 again.
