Moussaka

Ingredients

Sachet:

  • Spaghetti Bolognese
  • Cheese & Onion Crisps

Unlimited:

  • 1 x aubergine
  • 50g x courgette
  • 1 tsp x cinnamon
  • 1tsp x cumin
  • ½ tsp x oregano
  • ½ tsp x garlic salt
  • ½ tsp x onion salt
  • Nutmeg/Mace to garnish
  • Black Pepper

Limited:

  • 2 tbsp x Yogurt
  • 50g x white onion
  • 50g x red pepper
  • 50g x yellow pepper

Method

  • Dice the courgette, onions & peppers. Place in a tinfoil pouch and add the spices & salts. Roast for 10 to 15 minutes at 200 degrees to soften and infuse.
  • Slice the aubergine thinly using a knife or a mandolin, lightly oil and season then BBQ or grill. If you have neither of these, you can pan fry the aubergine slices until tender.
  • Make up the spaghetti Bolognese sachet with 150ml of water.
  • Add the roast spiced vegetables to Bolognese mix and stir to combine.
  • Blend one packet of cheese & onion crisps to a powder and set aside for later.
  • To assemble divide a thin layer (1cm deep) between two pie dishes / ramekins. Top with aubergine slices and repeat until you have two or three completed layers. The number of layers will depend on the size of your dish. Now top each dish with one tablespoon of yogurt, some freshly grated nutmeg or mace and some black pepper. To finish we add the ground cheese & onion crisps, this will give a great cheese flavour and crunch once roasted.
  • Roast in the oven at 200 degrees for 10 to 15 mins and serve with a nice fresh salad

Best thing since a slice of cake.! After seeing a picture of myself at Christmas 2015, l decided to do something so l took the plunge and phoned Alevere.  Hard bit done, the diet is simple, follow it as advised, and watch the pounds fall off, and they literally did.  The hardest thing is walking through the doors, but remember everyone there is in your shoes. I feel 21 again.
