Ketchup

Ingredients

Unlimited:

  • 50g x celery
  • 25g malt vinegar
  • 1 tsp x Dijon mustard
  • 5 x basil leaves
  • ¼ x satsuma zest
  • ½ tsp x onion salt
  • ½ tsp x garlic salt
  • Pinch cayenne Black Pepper

Limited:

  • 5tsp x sweetener
  • 50g x carrot
  • 150g x tomato (very ripe)
  • 1 tbsp olive oil

Method

  • Grate the carrot and celery then roughly chop the tomato.
  • Warm the olive oil in a saucepan then add the vegetables and sweat gently for two minutes.
  • Add all of the other ingredients and then place a lid on the pan and cook gently for 15 minutes.
  • After this time remove the lid and cook for a further 3-5 minutes, this will allow the excess moisture to evaporate and concentrate the flavours.
  • Transfer the contents of the pan to a blender and pulse until smooth.
  • Pass through a sieve and allow to chill.
