• Banana Dessert


  • ¼ Tsp Cinnamon


  • 60g x Egg White
  • 2 tsp x erythritol


  • Make the sachet as per the box and add the cinnamon.
  • Whip the banana pudding in a stand mixer until its volume increases and becomes light and airy.
  • Next whip the egg whites with the erythritol, pinch of salt and squeeze of lemon. Continue whipping until soft peaks form and the meringue holds its structure.
  • Fold the meringue into the banana pudding in 3 stages retaining as much air as possible.
  • Split the mix into six large demi-sphere moulds and level with a pallet knife.
  • Place in the freezer for a minimum of 2 hours.
  • To serve demould to demi-spheres of parfait and sandwich together.
  • Allow them 10 minutes at room temperature before eating to have the best texture.
  • Why not serve with some rhubarb puree and torn mint?
