CHINESE / CHIP SHOP CURRY SAUCE

Ingredients

Sachet:

  • Coconut Drink x1

Unlimited:

  • 250g aubergine puree
  • 240ml water
  • 2 tsp curry powder
  • ¾ tsp chinese 5 spice
  • ¼ tsp ground ginger
  • ¼ tsp garlic salt
  • ¼ tsp onion salt
  • Squeeze of lemon

Limited:

  • 35g Alevere ketchup

Equipment:

  • Sauce pan
  • Whisk

Method

  • Add all ingredient to the pan except the aubergine puree.
  • Bring up to a simmer stirring occasionally to prevent it catching on the bottom or side of the pan.
  • Add the aubergine puree and bring back to a simmer whisking to incorporate.
  • Serve.
  • This sauce can be kept in airtight container in the fridge for up to three days, or in the freezer for up to one month. Allow to cool to room temperature before refrigerating or freezing.
  • Chefs tip-why not have with turnip chips for an indulgent treat!

Best thing since a slice of cake.!
