Mushroom Risotto

  • 100g Cauliflower Rice (Restricted Vegetable)
  • 1 Alevere Mushroom Soup Sachet
  • Mushrooms
  • Spinach
  • Garlic Powder


  1. Grate cauliflower into a microwavable dish and place to one side.
  2. Add a tbs of olive oil to a frying pan.
  3. Chop some Mushrooms and Spinach together then fry for around 3-5mins on low heat.
  4. Mix 200ml of water to the mushroom soup sachet, add a pinch of Salt, Pepper, Garlic powder and mix well.
  5. Pour your mushroom soup sachet on top of your grated cauliflower (cauliflower rice) and mix all together.
  6. Microwave for 3 minutes.
  7. Garnish with your fried mushrooms and spinach
